Foods and wine were first paired in Europe where local vintners would craft wines that would go with the local foods.
Of course, wine and sashimi don't have that history... so there are no rules... but Stephan Wong, who owns the Pasadena wine bar The Nose, was trying to write a few. He threw a party where he paired wines with sashimi rarities like Flying Fish and Flying Fish Caviar.
